Ingredients

  • 6 salmon fillets, skin on, pin bones removed
  • Olive oil
  • Pinch of salt and freshly ground black pepper
  • 1 Bunch asparagus, trimmed and cut into 1-inch pieces
  • 450 g sugar snap peas, trimmed and sliced on the bias
  • 500 g cherry tomatoes, halved
  • 2 lemons, halved
  • 125 g fresh pesto
  • 1 lemon, zested
  • Fresh basil leaves, for garnish

Method: Traeger Grill Magic

  1. Set the Traeger temperature to 260°C and preheat with the lid closed for 15 minutes. Prepare a large roasting pan with baking paper.
  2. Rinse the salmon and pat dry. Brush with olive oil, and season with salt and pepper. Place the salmon pieces skin-side up on the tray, spaced 2 inches apart.
  3. Mix the asparagus, snap peas, and tomatoes with olive oil, salt, and pepper. Scatter around the salmon on the pan.
  4. Place the pan on the grill. Add the lemons, cut-side down, directly on the grill grate. Close the lid and cook for 5 minutes.
  5. Remove the lemons, stir the vegetables, close the lid, and cook for another 5 minutes or until the fish reaches 60°C.
  6. Remove the sheet pan from the grill. Serve the fish and vegetables on a platter, drizzled with pesto, squeezed grilled lemon, lemon zest, and garnished with basil leaves.
