As the head mixologist at Cardea and spirit specialist for Barrel Lane Whisky Club, I’ve witnessed the evolution of Australian whisky firsthand. It’s a journey that spans centuries, shaped by rich history, innovation, and a relentless pursuit of excellence.

When we talk about Australian whisky, we can’t ignore its humble beginnings. From the convict era to the Victorian gold rush, whisky production in Australia has endured highs and lows. The likes of Melbourne’s Joshua Brothers Distillery once dominated the landscape, but the industry faced adversity with the closure of major distilleries like Corio in the 1980s.

Yet, like the resilient spirit of its people, Australian whisky refused to fade into obscurity. In the 1990s, visionaries like Brian Poke and Bill and Lyn Lark sparked a craft distilling movement in Tasmania, paving the way for a new generation of whisky makers. Today, with over 120 distilleries across the country, Australia’s whisky scene is thriving like never before.

Australian Whisky distinguishes itself by its adherence to traditional practices while also embracing innovation and adaptability. Take, for instance, Callington Mill located in the historic heart of Tasmania’s Oatlands. Once notorious for illegal whisky distillation, this 19th-century tower mill now houses a cutting-edge whisky distillery, utilising the latest Tasmanian technology. Under the stewardship of John Ibrahim, the distillery has consistently garnered prestigious accolades such as platinum, double gold, and gold awards since its establishment in 2022, symbolising a new era for Australian whisky production.

Similarly, Backwoods Distilling, situated in Victoria’s high country region, exemplifies the essence of Australia’s burgeoning craft distillery scene. With a focus on local ingredients and artisanal craftsmanship, Backwoods’ handcrafted whisky competes favourably with established players in the global whisky market.

On Tasmania’s east coast, Spring Bay Distillery stands as a celebration of Tasmanian identity. This family-run distillery captures the terroir of the island, infusing its high-end spirits with the unique flavours of Tasmanian freshwater and a subtle hint of sea salt. By harnessing the unique coastal elements, Spring Bay Distillery stands as a champion of diversity within Australia’s rich whisky panorama.

And then there’s Sullivans Cove, a true pioneer in the Tasmanian whisky scene. With a new distillery on the horizon, and industry veterans like Patrick Maguire leading the charge, Sullivans Cove is poised to continue its legacy of excellence while expanding its reach beyond Australian shores.

But perhaps what excites me most about Australian whisky is its diversity. From single malts to rye whiskies, each distillery brings its own unique flavour profile to the table. Whether it’s the tropical notes of Cape Byron Single Malt or the farm-to-bottle ethos of Belgrove Rye, there’s something for every palate to discover.

As a mixologist & spirit specialist, I’m constantly inspired by the creativity and innovation driving the Australian whisky scene. From native grains to experimental ageing techniques, Australian whisky makers are pushing the boundaries of what’s possible, creating whiskies that truly reflect the spirit of this vast and diverse land.
